The Yuri Kiritsuke is one of our new creations that is based on the feedback we got from many customers. With its rustic charm, a unique piece of beauty was created, fully handmade from start to finish.
The production process for this knife takes longer than that of an ordinary knife. It consists of quenching - hammer - tempering - clamping steel - hammer - quenching - tempering and other continuous cycle operations. For the quenching splash 780 degrees are needed, the tempering is done with 180-200 degrees. Finally each knife is sharpened by hand. This operation guarantees the extraordinary hardness and sharpness of this knife.
The blade has a tsuchime look and is as rustic as unique. The handle is riveted and full tang, making this knife even more robust than it already is.
The edge of the blade is extremely sharp allowing you to cut through any ingredient seamlessly.
All in all this knife is a perfect piece of handmade art, so make sure you clean and dry the knife immediately after usage to ensure it lasting for a lifetime!

Our Recommendation
For optimal, long lasting sharpness we recommend you storing your knives using a knife block and sharpening your knives regularly using a whetstone or sharpening steel.
