The blade is beveled on one side, creating a thinner edge than a knife beveled on both sides, which allows extremely fine cuts. Also, only the beveled side requires the main sharpening, so less time is required for maintenance. Variation:Variation in the natural wood grain. Knives that are not hammered but manually forged employ metals such as pre-bonded steel. They are shaped by pressing devices holding the Kiridashi knife molds. This results in slight size and weight variations.History: Baishinshi is a brand produced by a blacksmithing family that has been forging carving knives and chisels for more than 250 years. Keep the blade dry and free of moisture or it may rust.   Returns must be made within 2 weeks in original, unused condition with all packaging for either 1. Store credit for the full amount or 2. Refund - minus a 20% restocking fee.  Tortoise does not cover the cost of return shipping or the cost of re-shipping an exchange, and the cost of shipping for returns and exchanges is the responsibility of the customer.
