Horse hair bristles are soft and safe to use on all surfaces, and is preferable for use with more delicate dishware such as porcelain. Also available in ixtle, which is medium firm. Especially well suited for our preferred method of cast iron care: after cooking, use a dry brush to remove any food that sticks, pour out excess fat, quickly rinse with hot water and wipe dry using a clean rag - easy! Re-oil and heat young cast iron after cleaning to build up a stronger seasoning.
